This project aims at improving the capacity of food producers and suppliers, policy makers and researchers by providing a better understanding of food markets outside grocery and speciality retail channels, where knowledge gaps exist.

Objective Summary

Define “the size of the prize” for food producers and suppliers – the structure, influential trends and relative size of foodservice channels to consumers Identify areas of potential future gaps and opportunities, including the scope for innovation, for suppliers to these channels and markets Articulate success stories in various aspects of supplying these channels that contain learnings for others Give direction through recommendations tailored for both industry and governments Clarify where future collaborative research and development efforts by and across industry sectors may improve capacity in these markets Identify scope to improve the operating environment in future, including improved supply chain knowledge and connectivity.
