2017 Pathogen survey


Microbiological surveys of chickens are important in providing participants with a way to assess the ongoing effectiveness of food safety programs and interventions within the participating plants and in comparison to other industry participants. The national survey will allow direct comparison to previous surveys in 2008, 2009 and 2013. The project will test and report on the incidence and levels of Salmonella (including serotypes) and Campylobacter on whole chicken carcasses submitted to CSIRO. Individual plants will be provided with their results and a comparison to past surveys for their plant. Direct comparisons with previous surveys will be undertaken. The final report delivered to RIRDC will also include comparison to the agreed industry acceptable levels, separation of Salmonella Sofia from nonSofia Salmonella, industry averages reported as Campylobacter sp. and C. jejuni only and both graphical and statistical analysis of results.

Objective Summary

The objectives of this survey are 1. to test and report on the incidence and levels of Salmonella (plus serotypes), Campylobacter, TVC and E. coli on whole chicken carcases submitted by chicken processing plants across Australia 2. To provide participating plants with the current status (with respect to key pathogens) of their finished product 3. To make direct comparisons with results obtained in 2008, 2009, 2013, for the industry as a whole and for individual participating plants
